Growing conditions: Sandy loam topsoil on granitic, feldspar sand and gravel subsoils
Winemaking notes: Hand harvested Oct. 5.
Maceration & Fermentation: De-stemmed and crushed into 1-ton open top fermenters, with 10% whole clusters. Cultured yeast fermentation spiking at 32 C. Maceration for 24 days.
Ageing: 17months in 225 L. neutral French barrels after pressing
